WHAT a winter. Summer can't come too soon. Or so people say.
But just wait. The day is fast approaching when soaring temperatures, blistering sun and fraying tempers will have us scrambling for a cool, inviting restaurant. The snug Italian spots, with their red-hot pizza ovens, which we flocked to just a few weeks ago will lose their appeal. So, too, will the homey German places sending out overflowing platters of wursts and potato dumplings.
Although nearly every restaurant is air-conditioned and we could eat in comfort in any of them, some are unlike the others; they come across as refreshing breezes. Often it is the decorator who has brought this about by using cool colors, filmy fabrics and lots of greenery. Lucky are the eating places with water views, the best way to soothe the soul and lower the temperature. Some spots offer cuisines from tropical climes where the food is designed to perk up flagging appetites.

- DINING OUT; Taking a Pan-Asian Approach With Flair
RESTAURANT REVISITED
It has been four years since Baang Cafe and Bar (1191 East Putnam Avenue, Riverside; 203-637-2114) opened with a flourish, its flashy decor and fusion cooking setting off sparks.
Well, Baang's lively cuisine continues to dazzle, a creative marriage of Asian and Western ingredients and techniques. We had feared Baang's style might fray around the edges and seem old, but this has not happened, as we happily discovered on a recent visit.
Baang's many signature dishes -- crackling calamari salad, crispy spinach, pan-fried pepper oysters and tempura tuna sashimi, for instance -- were still exciting and wonderful. And the serving staff , always a Baang asset, seem as energetic as ever. The restaurant's one big negative remains a super-high decibel level. Even so, Baang still deserves its rating of Excellent.

BAANG CAFE AND BAR
When this knock-out looking cafe opened two years ago in Riverside, it introduced Western-Asian fusion cooking to Fairfield County. Fortunately, Baang is going strong, the food still Excellent. Virtually everything is a delight -- provided the diner is open-minded about sometimes startling combinations.
Our special favorites, crackling calamari salad (with the squid very lightly breaded and fried, then tossed in hot chili oil and lime, served on a bed of greens), charred rare tuna (just beyond the sushi stage, with avocado and a tomato-wasabi vinaigrette) and sizzling whole fish (marinated in ginger, with a red chili dipping sauce) are dynamite. And the crispy spinach side dish, deep-fried to gossamer crispness in soy oil, is a must. Desserts, like the chocolate pagoda and pineapple-coconut upside down cake, are spectacular -- if you have room.

Almost everything is topnotch, from starters to desserts like lime-filled eclairs and a toasted coconut-banana tart. We also recall a crackling calamari salad with a hint of hot chili oil and light lime-miso vinaigrette, gossamer yet crispy spinach and rare tuna with a crunchy edge in a tomato wasabi vinaigrette.

Recalled: a superb chilled green tomato gazpacho, deeply spiced, with an abundance of Dungeness crab, fresh coriander, and thin croutons of crisp lotus root. There also were two of the year's very best desserts, a caramelized macadamia nut tart and chocolate pagoda dark fudge cake.

ORIENTAL and Occidental fuse beautifully at Baang Cafe and Bar, just south of Exit 5 of Interstate 95 in Riverside. The culinary core is Chinese, with Japanese and Thai touches; the ingredients a mix in which some Western elements shine. The results are so so fresh, so inventive and full of real flavor that you may never return to the banality of so many Chinese restaurants.
